Khichri-An, Unsung Hero Among Indian Recipes

The rich, silky, nutty flavor of ghee adds an incomparable flavor to food. Along with exotic spices, ghee is what gives Indian cuisine its depth of flavor and unique aromas.

1 pound unsalted butter (organic if available), a large pot or sauce pan, a few sheets of cheesecloth, a strainer, a clean container or one pound glass jar with a lid.
 

 


Everyone has their favourite curry house curry and here I would like to show you one of the key building blocks to creating them. Make a large batch of the homemade curry powder and you could be eating your favourite curries in minutes in the comfort of your own home.

Combine the first three ingredients and set aside. Mix together the wet ingredients and pour over the dry ingredients, and stir to combine. Once mixture comes together, knead for 10 minutes, and then set aside to rise until doubled in bulk. Punch down dough and divide into 6 portions. Roll or pat out thinly into a large circle, then pull on one end to stretch to the traditional teardrop shape. Bake for 8 to 10 minutes on a pizza stone in a 475 degree oven, or on baking sheets. If making over a grill, set over high heat, close lid and check after 1 minute. If well browned, flip for 1 minute or more until done on both sides.

The following recipe combines spices like garam masala, chili, ginger, and cumin with vegetables to make a healthy vegetable dish. You can use any vegetables you like, including peas, beets, cabbage, broccoli, or carrots. Just finely chop them, boil them, and drain them well. This recipe calls for ghee, which is clarified butter. The cutlets are wonderful served hot with chutney on the side.

 

 



Strain it while still hot or warm, pouring it through a cotton cloth into a stainless steel or heavy glass container. At this point it is very hot, so you should always be cautious. Another way of doing this is to let the Ghee cool down, and then strain it by pouring it through a cotton cloth or a handkerchief directly into clean glass jars or bowls.

Rich source of calcium: Milk is rich in calcium and calcium is essential for healthy bones and teeth. Diseases such as cancer and osteoporosis can be prevented by proper intake of milk. Growing children also require milk for proper growth of bones and teeth.

Cover and cook koubba for 25-30 minutes, stirring occasionally. When they begin to float to website the top of pan, they are ready. Remove them and set them on a warmed dish. When all the dumplings are ready, transfer them to a serving dish and pour sauce over them. Serve with basmati rice.
